Chocolate-Sherry Cheesecake
Crust
1 1/2 cups crushed chocolate graham crackers
1/3 cup melted butter
Topping
2/3 cup heavy cream
grated chocolate

Filling
1 cup plus 1 tbs cream cheese
2 eggs, beaten
2 tbs sugar
1 tbs sherry
6 1 oz squares semi-sweet chocolate

Melt butter and mix with graham crackers to make standard cheesecake crust. Press into bottom and sides of 9 inch pie pan and chill.
Blend cheese, eggs, sugar, and sherry. Melt chocolate squares (microwave or over pan of hot water). Beat melted chocolate into cheese mixture, then pour into pie shell. Bake 30 minutes at 375 degrees.
Whip cream until thick, pipe swirls onto cooled pie. Decorate with grated chocolate. Serve chilled.
