Grapefruit-Honey Cheesecake
Crust
1 9 inch frozen pie shell (wheat)
Topping
2 grapefruit
2 tbs honey
1 tbs water
brown sugar

Filling
1 1/2 cups cream cheese
1 tbs honey
1/4 cup sugar
2 beaten eggs
1/2 can frozen grapefruit juice concentrate

Bake pie shell according to directions (you'll find frozen flour pie shells in the frozen foods section). Let cool
Blend cheese, honey, and sugar in bowl. Beat in eggs, then grapefruit juice. Pour in pie shell, then bake 30 to 40 minutes at 375 degrees. Remove and let cool
Peel grapefruit and split into segments (remove pith). Arrange on top of cheesecake. Mix honey and water, heat gently. Glaze fruit with honey-water mixture. Sprinkly sugar (you can also use "raw" sugar) and chill for a few hours before serving.
