Kiwi Cheesecake
Crust
1 1/2 cups crushed shortcake cookies
1 tsp apple pie spice
5 tbs softened butter

Filling
1 1/2 cups cream cheese
4 cups peeled kiwi
3/4 cup sugar
5 tsp unflavored gelatin
2 tbs water
1 1/4 cups heavy cream
1/4 tsp arrowroot

Melt butter and mix with cookies and spice to make standard cheesecake crust. Press into 9 inch springform pan and chill.
Simmer kiwi and sugar in pan over low heat to pulp; strain out the pips.
Dissove gelatin and water (may need to heat water); set aside 3/4 cup of kiwi puree and add gelatin mixture, leave to cool.
Beat cream cheese till smooth, add kiwi/gelatin mixture. Whip cream and fold in; spoon mixture into pan and chill until set.
Mix arrowroot with remaining kiwi puree; boil till thickened. Cool, then use to top the cheesecake. Chill till set.
